Chickpeas with Garlic, Tomatoes and Spinach

Chickpeas (also known as garbanzo beans) are a source of so many wonderful n nutrients- like protein, fiber, calcium, iron, potassium and more. They’re also a major food staple for many who don’t eat meat (although they’re not a great protein source they do have some!).

I love this dish because it’s cozy, flavorful, and can be a great addition to a main course – and can also be served as a meal in itself. This type of meal is also great for leftovers and can help you with meal prep during the week too. Enjoy!
