Anti-inflammatory Kale and Tomato Salad

Kale is a delicious, healthy, good-for-you (and popular) green veggie that goes so well in so many different dishes- like smoothies, juices, salads, entrees and more.

I wanted a light and easy salad – so I made this yummy, summery and delicious salad that’s loaded with a whole lot of goodness.

This salad is fresh, filling and loaded with nutrients like anti-inflammatory lycopene and quercitin as well as vitamins A and C from both the mango and tomatoes, and healthy and anti-inflammatory fats from the olive oil and almonds.

Try this salad as a main dish (optional to add your favorite lean protein like chicken or salmon!) or have it as part of any meal or snack.
