Paleo Apple Muffins

Muffins are one of my favorite treats; however, being gluten and dairy free it can be hard to find muffins that I can eat. However, paleo and gluten free muffins like these are definitely ones I can eat (in moderation of course)- and what’s great? They’re simple to make and delicious!

Prep time: 10 minutes

Total time: 40 minutes

Makes: 6 muffins

Ingredients:

  • 1/3 cup coconut flour
  • 4 eggs
  • dash salt
  • 1 mashed banana
  • ½ teaspoon vanilla
  • dash cinnamon
  • 2 Tablespoons nut butter
  • ½ teaspoon baking powder
  • 3 tablespoons water
  • 1 apple, cut roughly

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine all ingredients but the apple in a mixing bowl, and mix thoroughly (use an electric mixer or a whisk/spatula).
  3. Once all ingredients are well mixed, fold in apples.
  4. Pour the batter into un-greased muffin pan.
  5. Bake for 20 minutes or so until tops lightly browned.
  6. Allow to cool for 10-15 minutes, then remove from pan and enjoy!
