Chicken Paillard with Greens

Easy, nutritious and delicious meals and not only my favorite, but also my specialty. This chicken paillard with greens is an all-time favorite of mine and one that you can easily make with ingredients that you likely already have in your refrigerator.

What I love about chicken paillard is that you can make it with the regular piece of chicken that you purchased for dinner and the greens that you have in your fridge, and that’s about it! So it’s a low maintenance and really (new) yummy way to prepare your meal. I also always feel like the chicken looks bigger when pounded thin, which can also make it feel more satisfying (also always a good thing!).

Chicken Paillard with Greens

Prep time: 10 minutes

Total time: 25-30 minutes

Makes: 2 servings

Ingredients:

  • 2, 4 oz chicken breasts, pounded thin
  • 1 Tbsp avocado oil (I always cook with this!), divided
  • Salt and pepper to taste

For the sauce:

  • 1 clove garlic, chopped
  • 1 Tbsp capers
  • 1 Tbsp olive oil
  • 1/2 lemon, juiced

For the salad:

  • 3 cups of mixed greens, washed and dried
  • 1/2 cup cherry tomatoes, halved

For the dressing:

  • 1 Tbsp olive oil
  • 1/2 lemon, juiced
  • Salt and pepper

Instructions:

  1. Pound the chicken thin, using a meat mallet (or hammer if you don’t have a specific mallet) –  I usually put the chicken between two sheets of plastic wrap to do this.
  2. Heat a medium skillet over low/medium heat (you may need two skillets for this) and add 1/2 of the avocado oil and allow pan to heat for 1-2 minutes.
  3. Add chicken to pan, allow to cook for about 5 minutes on each side- add salt and pepper to taste, then remove from heat and set aside once cooked (repeat if you only had 1 pan to use and it wasn’t big enough).
  4. Mix the sauce for the chicken (olive oil, capers, garlic etc) in a small bowl and pour half of the mixture over each piece of chicken (as a note this can be added also while cooking).
  5. In a salad bowl place the washed and dried mixed greens; in a separate small bowl mix together the ingredients for the dressing and dress the salad.
  6. Plate each piece of chicken and add greens on top.
  7. Serve and enjoy!
